I read somewhere that 1 in 10 don't cook turkey on Thanksgiving--and that doesn't include vegetarians. Most years we opt to have a Tofurkey on Thanksgiving but this year I decided to go for a vegetarian chilli instead. It was super good and the best thing was, I threw ALL the ingredients into a crock pot. There really is truth to the saying "Set it and forget it!" I highly recommend trying this recipe out and getting yourself a crock pot, especially for the upcoming cold, winter months. You really can't go wrong with veggie chili---it's pretty forgiving and you can always add more of what you like and cut back on ingredients you don't like. Plus, there's PLENTY for leftovers!
The recipe I used came from Appetite For Reduction, by Isa Chandra Moskowitz.
Black Bean & Veggie Chili
1 onion, diced small
1 green pepper, diced small
3 cloves garlic, minced
1 lb zuchini
1 cup corn
1 large carrot
1.5 cups vegetable broth
1 28 oz can diced tomatoes
2 tbs tomato paste
1 15 oz can black beans, drained and rinsed
1 tsp olive oil
3 tsp chili powder
2 tsp ground cumin
1 tsp dried oregano
1 cup lightly packed fresh cilantro
2 tsp honey
2 tbs freshly squeezed lime juice
1 tsp salt
(I added a can of kidney beans, carrot and some extra chili powder)
Instead of cooking according to the directions, I literally threw everything into a slow cooker
(AKA Crock Pot) and set it on high for 4 hours. Super good and super easy!

200 calories, 2.5 g fat, 38 g carbs, 12 g fiber, 10 g sugar, 11 g protein, 640 mg sodium
